 Pancake Day!!

Its pancake day tomorrow (tues 20th feb).
I thought this might be useful for someone.....

Basic Pancake Recipe

Makes about 12 small pancakes

100g white flour
pinch of salt
1 egg
150ml milk
150ml water
1 teaspoon olive oil (plus more for greasing the pan)

Sift the flour and salt together into a basin, make a well in the centre and break in the egg.
Add a little milk and stir gently.

Add the rest of the milk slowly and stir until smooth.

Stir in the water and oil and beat for one minute.

Heat some oil in an omelette pan and when it reaches the temperature and bubbles, pour in about 3 tablespoons of batter.

Cook for just under a minute - using a spatula to keep an eye on how it's cooking.

Now the fun bit ... FLIP IT - or if you find you're dropping too many, turn it over with the spatula.

Cook the other side for 15 seconds.


Tips

If you have time, make the batter beforehand; cover it and let it stand for a couple of hours - this allows the gluten to expand.
Do not over beat the batter or you'll get tough rubbery pancakes.
The batter should be the thickness of single cream. If it has thickened, thin it with a little water.
Heat the pan to a moderate temperature - to get the right temperature add a few drops of water; if they dance on the surface it's the right temperature.
Use a paper towel soaked in oil to add a little oil to the pan - that way your pancakes don't come out too oily.
Find a small cup that you can use to measure out the correct amount of mixture for one pancake.
So that the whole family can eat together, stack the pancakes separated by (sugared?) greaseproof paper on a warmed plate and cover with an inverted plate. Either put the plate on a saucepan of simmering water or in a cool oven.

For sweet toppings, the combinations are endless, but here are some of our favourite ideas to start you off ...

sugar & lemon juice
jam
maple syrup
chocolate spread & chopped nuts
apple & cinnamon
ice cream & chocolate sauce
honey & raisins
chocolate spread & banana
fruit & ice cream
strawberries & whipped cream
nutella & mini marshmallows

And for savoury toppings, a good rule of thumb is put on anything that you'd put on a pizza..

cheese, tomato & ham
minced beef
tuna & mayo
scrambled egg & bacon
beans
creamy chicken
mushrooms & creme fraiche
mozzarella, red onion & pepperoni
spinach & ricotta

Thanks for the pancake recipie i actually forgot it was pancake day and how to make them!! other half is going to make us some now!!!!
